Deep Fried Perogies

Deep Fried Perogies!  This is indulgence.  I have never actually made them myself but both grandmothers and my aunt always have them on hand. They are literally deep fried and then we eat them with the sour cream, bacon bits, chives etc on top. It's one of my favorites but just looking at them I gain weight. 

Ingredients

6 cups of flour
1 tsp bakin
g soda
1 tsp salt
Approximately 2 cups of warm water to make a soft dough

3 cups dry cottage cheese
2 eggs beaten
4-5 large potatoes 
1/2 cup Butter 
1 Onion

Preparation

Melt the butter in a frying pan.  Dice the onion and then fry in the butter. Make sure you don't brown the onion. Boil the potatoes, drain and then mash with the butter and fried onion mixture. Season with salt and pepper to taste. 
Beat the eggs and add to the 2 cups of warm flour. In a seperate bowl mix the flour, baking soda and salt together. Add the cottage cheese to the dry ingredients and mix well. In a mixer slowly add the dry ingredients to the water and egg mixture. mix to make a soft dough. Finish kneading by hand.  Roll out the dough and cut out circles for the perogies with a soup can. 
Put a teaspoon of potato in the centre of the circle, fold in half and seal the edges.  Deep fry in oil.  They can be frozen and warmed in the oven for future use
My grandmothers always served them with a cream dill sauce. To make the sauce you saute chopped green onion and dill in bytter, then slowly add cream until it thickens.
