NATCHINKA
Grandma Schwab made the best Natchinka. This is a sweet cornbread though if you search online the recipes for this dish vary significantly. The only place I ever had it was her house so perhaps I only know it as natchinka. My mom and brother have tried making it a few times but it was never quite the same. That wily grandmother of mine never divulged her true recipe - she went more by a pinch of this and pinch of that than formal measurements..

Ingredients
1 cup cornmeal
½ cup melted butter
3 tablespoons sugar
¼ teaspoon salt
2 eggs
2 cups milk
½ teaspoon soda
1½ teaspoon baking powder
Preparation
In mixing bowl pour boiling water over cornmeal, enough to wet all cornmeal. Add butter, sugar and salt. In a separate bowl beat eggs well and add 1 cup milk. Mix and add to cornmeal.
In a cup, mix baking soda, powder and a little of the milk. Add to cornmeal mix. Add remaining milk and mix until smooth. Pour into a greased baking dish. Mixture should be thin. Bake at 375 for 1 ½ -2 hours.
