Nanking Cherry Jam

This is a recipe from my aunt which is similar to the pin cherry recipe but uses nanking cherries instead.

Ingredients

Nanking cherries

Water

3 to 4 cups of sugar

1-2 packets certo pectin

Preparation

Add water until it is 1/4 inch below the level of cherries.  Bring to a boil then simmer for 20 minutes. Mash and then drain the juice through a sieve.  Measure the juice which should be about 5 to 6 cups.  Add 3/4 cups of sugar less than the juice.  Boil down for 5-10 minutes.  Bring to a rolling boil and add certo. Boil for another 3 minutes and then put in jars
